Hi, I’m Kristin,
Baking has been part of my life for as long as I can remember. I grew up in a family that entertained, which meant I spent a lot of time in the kitchen and even more time watching people eat, talk, and gather around food. That part never left me.
What came later filled in the rest. Six years working in catering taught me what people actually reach for when no one's watching. Four years running a home bakery taught me which flavors made people go quiet in the best way. Two years teaching high school culinary arts taught me that food, at its best, is just joy made edible.
Every one of those chapters pushed me toward the same thing: giving people approachable desserts that leave lasting impressions. Flavors that feel familiar and surprising at the same time, the kind that make someone go back for seconds before they've finished chewing the first.
That's the whole idea behind The Tiny Cookie Trolley.
Every recipe on our menu has a story. Most of them start with a memory.
My dad grew up in Georgia, and every summer my family would spend a week or two down South. Banana pudding was one of the first desserts I remember being genuinely excited about as a kid, not just eating because it was there, but actually looking forward to it all year. My parents made it at home too, and that recipe eventually became the first one I ever developed from scratch. The banana pudding cookie has been on our menu since the beginning. So have quite a few other things with Southern roots.
The cherry almond hand pie came from a different kind of memory. I've never been a cake person, and even as a kid I'd ask for pie on my birthday instead. My mom always made cherry pie with almond, and honestly, to this day it's the thing I'd choose above almost any other baked good. It feels like the most fitting dessert on the menu: something I'd wanted my whole life, finally made exactly the way I wanted it.
That's what I mean when I call this a flavor autobiography. Nothing on it is arbitrary. Every ingredient is there because at some point, it meant something.

The Tiny Cookie Trolley is Denver's only dessert caterer combining interactive service (the cookie cart, roaming milk and cookies) with a full elevated-nostalgic dessert menu across six categories: cookies, hand pies, whoopie pies, brownie bites, bars, and Rice Krispies. Over 40 flavors, with vegan, dairy-free, and gluten-friendly options throughout.
We've served weddings and events across the Denver Metro Area and the Front Range including: Blackstone Rivers Ranch, The Manor House, The Catbird Hotel, Bestow Events, Balistreri Vineyards, and the Space Gallery, the St. Julien Hotel & Spa, and many others. A few other things worth knowing
I have a deep love for Ireland. That photo is me at Dunluce Castle, and yes, it was as impressive and breathtaking as it looks. I share my home with two black cats named Pippin and Swiss Roll, who have strong opinions about everything except dessert, which I find professionally insulting. And despite being a Colorado native, I’ve never once been skiing. I've made peace with not breaking all my bones and freezing to death.

We operate out of Spindle Kitchen in Denver. Although, for pickup orders, we meet folks at Bardo Coffee House in lakewood.

Yes, we have a retail food license and operate out of a licensed and inspected commercial kitchen. We also carry liability insurance and can provide a COI upon request.

We are not a certified gluten-free facility. So while some of our flavors can be made “gluten-friendly,” meaning no gluten was used in the item, we cannot guarantee it’s 100% GF. (Only foods containing less than 20 ppm (parts per million) of gluten can be certified Gluten-Free.) We also make dairy-free, vegan, and nut-free bakes.

As much notice as you can give us! Because we’re a small operation and have to book hours in our kitchen, the more heads up you can give us, the better chance we can help!

Fender to fender, our original trolleyis 38 inches wide and about four feet long. With the canopy on, our cart stands about 9 feet tall and is equipped with a folding side table, under canopy lights, and a light-up, LED logo.
Our small size allows us to celebrate indoors. However, the original trolley requires double doors to move inside, which may mean certain venues may necessitate our more nimble, umbrella cart.
